Air Fryer Banana Muffins

  • 2 ripe bananas, mashed
  • 1/2 cup unsweetened applesauce
  • 1/4 cup non-fat Greek yogurt
  • 1/4 cup honey or maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour or whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • A pinch of salt
  • Cooking spray

Instructions

  1. Preheat the Air Fryer: Set your air fryer to 350°F (180°C) and let it preheat.
  2. Prepare the Batter: In a mixing bowl, combine mashed bananas, applesauce, Greek yogurt, honey (or maple syrup), egg, and vanilla extract. Mix well.
  3. Combine Dry Ingredients: In another bowl, whisk together flour, baking soda, cinnamon, and a pinch of salt.
  4. Mix Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, stirring until you have a smooth batter.
  5. Prepare Muffin Cups: Lightly coat the muffin cups with cooking spray to prevent sticking.
  6. Fill the Cups: Spoon the batter into the muffin cups, filling each about two-thirds full.
  7. Optional Toppings: For extra flavor, top each muffin with chopped nuts or dark chocolate chips.
  8. Air Fry: Place the muffin cups in the air fryer basket with proper spacing. Cook for around 12-15 minutes or until a toothpick inserted comes out clean.
  9. Cool and Serve: Let the muffins cool in the air fryer for a few minutes before transferring them to a wire rack. Enjoy!
