Air Fryer Banana Muffins
- 2 ripe bananas, mashed
- 1/2 cup unsweetened applesauce
- 1/4 cup non-fat Greek yogurt
- 1/4 cup honey or maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour or whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- A pinch of salt
- Cooking spray
- Preheat the Air Fryer: Set your air fryer to 350°F (180°C) and let it preheat.
- Prepare the Batter: In a mixing bowl, combine mashed bananas, applesauce, Greek yogurt, honey (or maple syrup), egg, and vanilla extract. Mix well.
- Combine Dry Ingredients: In another bowl, whisk together flour, baking soda, cinnamon, and a pinch of salt.
- Mix Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, stirring until you have a smooth batter.
- Prepare Muffin Cups: Lightly coat the muffin cups with cooking spray to prevent sticking.
- Fill the Cups: Spoon the batter into the muffin cups, filling each about two-thirds full.
- Optional Toppings: For extra flavor, top each muffin with chopped nuts or dark chocolate chips.
- Air Fry: Place the muffin cups in the air fryer basket with proper spacing. Cook for around 12-15 minutes or until a toothpick inserted comes out clean.
- Cool and Serve: Let the muffins cool in the air fryer for a few minutes before transferring them to a wire rack. Enjoy!
