You do not need to peel the potatoes.<\/p>\n<p>Next, use a mandolin to slice the potatoes to 1\/8th inch slices and then rinse them in water again to get rid of any excess starch.<\/p>\n<p>Fill a large bowl with ice cold tap water and soak the slices for 15 minutes. Next, drain the water and refill the bowl with new ice cold water and soak the slices for another 15 minutes.<\/p>\n<p>Once they have soaked a second time, preheat the air fryer to 360 F or 180 C. Next, drain the potatoes and pat them dry with a kitchen towel. After laying them out flat, spritz the potatoes with cooking oil and sprinkle on some salt.<\/p>\n<p>When they are ready, place them in a single layer in the basket without overcrowding them. Fry them for 15 to 20 minutes, flipping mid way through at about 10 minutes.
