It has a good balance of fat and protein, which makes it ideal for roasting in an air fryer.<\/p>\n<p>These cut also has plenty of marbling, which helps to keep the meat juicy and succulent. The crackling is also much easier to get right with this cut as it benefits from the fat and natural collagen in the meat. The crackling also gets nice and crispy when cooked correctly in an air fryer.<\/p>\n<p>If you are buying from the butcher, let them know what you intend to use the meat for, and you will be served the best meat possible.
