Ingredients:

  • 2 cups cooked and chilled white rice (day-old rice works best)
  • 1 cup cooked chicken breast, diced (pre-cooked or rotisserie chicken works well)
  • 1/2 cup frozen mixed vegetables (peas, carrots, corn, and green beans)
  • 1/4 cup diced onions
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional but adds great flavor)
  • 1 tablespoon vegetable oil
  • 1 teaspoon sesame oil (for added flavor)
  • 2 large eggs, beaten
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)
  • Sesame seeds for garnish (optional)

Instructions:

  1. Preheat your Air Fryer: Set your air fryer to 400°F (200°C) and allow it to preheat while you prepare the ingredients.
  2. Cook the Eggs: In a small bowl, beat the eggs with a pinch of salt and pepper. Heat a non-stick skillet over medium heat, add a little vegetable oil, and pour in the beaten eggs. Scramble them until cooked through but still moist. Remove the eggs from the skillet and set them aside.
  3. Sauté Onions and Garlic: In the same skillet, add a tablespoon of vegetable oil. Sauté the diced onions and minced garlic until they become fragrant and the onions turn translucent.
  4. Air Fry the Chicken: While the onions and garlic are sautéing, toss the diced chicken with a little oil and place it in the preheated air fryer basket. Air fry for 5-6 minutes until the chicken pieces are crispy and heated through.
  5. Add Frozen Vegetables: Once the onions and garlic are cooked, add the frozen mixed vegetables to the skillet. Stir-fry for 2-3 minutes until the vegetables are heated through.
  6. Add Rice and Sauces: Add the cooked and chilled rice to the skillet, breaking up any clumps with a spatula. Pour in the soy sauce and oyster sauce (if using), and drizzle sesame oil over the rice. Toss everything together until well combined and the rice is evenly coated with the sauces.
  7. Incorporate Cooked Eggs and Chicken: Crumble the scrambled eggs and add them to the skillet with the fried rice. Also, add the air-fried chicken. Gently stir everything together until all the ingredients are evenly distributed.
  8. Air Fry Fried Rice: Transfer the mixture to the air fryer basket. Cook the fried rice in the air fryer for 4-5 minutes, stirring halfway through to ensure even cooking and prevent sticking.
  9. Garnish and Serve: Once the fried rice is heated through and slightly crispy, remove it from the air fryer. Garnish with chopped green onions and sesame seeds if desired.
