Sweet Pineapple Bread Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup crushed pineapple, drained
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • Optional: 1/2 cup chopped nuts (e.g., walnuts or pecans)

Instructions:

  1. Prepare the Air Fryer:
    • Preheat your air fryer to 320°F (160°C) for about 5 minutes.
    • Grease a 6-inch round or square cake pan that fits into your air fryer basket.
  2. Mix Dry Ingredients:
    • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Mix Wet Ingredients:
    • In a large bowl, combine the melted butter and sugar. Beat until well combined.
    • Add the eggs one at a time, beating well after each addition.
    • Stir in the crushed pineapple and vanilla extract.
  4. Combine Ingredients:
    • Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined.
    • If using nuts, fold them into the batter.
  5. Transfer to Pan:
    • Pour the batter into the prepared cake pan, spreading it evenly.
  6. Air Fry the Bread:
    • Place the cake pan in the preheated air fryer basket.
    • Air fry at 320°F (160°C) for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
    • If the top starts to brown too quickly, cover it with aluminum foil and continue baking until done.
  7. Cool and Serve:
    • Once baked, remove the bread from the air fryer and let it cool in the pan for about 10 minutes.
    • Transfer the bread to a wire rack to cool completely.
    • Slice and enjoy your sweet pineapple bread!
