Air Fryer Blueberry Cheesecake Chimichangas

Air Fryer Blueberry Cheesecake Chimichangas

Ingredients:

  • 8 small flour tortillas
  • 8 oz (225g) cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup blueberries (fresh or frozen)
  • 1 tsp lemon zest
  • 1 tsp lemon juice
  • 1/4 cup powdered sugar
  • Cooking spray

Optional Toppings:

  • Powdered sugar for dusting
  • Whipped cream
  • Additional blueberries

Instructions:

  1. In a mixing bowl, combine the softened cream cheese, granulated sugar, and vanilla extract. Mix until smooth and well combined.
  2. In a separate bowl, gently toss the blueberries, lemon zest, and lemon juice together.
  3. Lay out a tortilla on a clean surface. Spoon a generous dollop of the cream cheese mixture onto the center of the tortilla, then top with a spoonful of the blueberry mixture.
  4. Fold in the sides of the tortilla and then roll it up tightly, similar to a burrito. Secure the ends with toothpicks to prevent the chimichangas from unraveling.
  5. Preheat your air fryer to 350°F (175°C).
  6. Lightly coat the chimichangas with cooking spray to help them crisp up.
  7. Place the chimichangas in the preheated air fryer basket in a single layer, making sure they are not touching. You might need to cook them in batches depending on the size of your air fryer.
  8. Air fry the chimichangas for about 8-10 minutes, or until they are golden brown and crispy. Remember to flip them halfway through for even cooking.
  9. Once the chimichangas are cooked, carefully remove them from the air fryer and let them cool slightly before removing the toothpicks.
  10. Dust the chimichangas with powdered sugar, and if desired, top with whipped cream and additional blueberries before serving.

Notes:

  • Tortilla Size: The recipe calls for small flour tortillas, but you can use larger ones if you prefer. Adjust the filling quantity accordingly.
  • Cream Cheese: Make sure the cream cheese is softened to room temperature for smooth mixing.
  • Blueberries: You can use either fresh or frozen blueberries. If using frozen, there’s no need to thaw them before using in the filling.
  • Toothpick Removal: Be cautious when removing the toothpicks from the chimichangas after cooking. They might be hot.
  • Air Fryer Variability: Cooking times might vary depending on the brand and model of your air fryer. Keep an eye on the chimichangas to avoid overcooking.
  • Serving: These chimichangas are delicious on their own or served with optional toppings like powdered sugar, whipped cream, or extra blueberries.
  • Variations: Feel free to experiment with different fruit fillings or add a sprinkle of cinnamon to the cream cheese mixture for extra flavor.
