20-Minute Air Fryer Roasted Roma Tomatoes

Air Fryer Roasted Roma Tomatoes

Ingredients:

  • 4-6 Roma tomatoes, sliced in half lengthwise
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 2-3 cloves garlic, minced
  • 1 teaspoon dried Italian herbs (such as oregano, thyme, or basil)
  • Optional: grated Parmesan cheese, chopped fresh basil for garnish

Instructions:

  1. Preheat your air fryer to 375°F (190°C).
  2. Slice the Roma tomatoes in half lengthwise and gently scoop out the seeds and inner pulp.
  3. In a bowl, mix olive oil, minced garlic, dried Italian herbs, salt, and pepper.
  4. Place the tomato halves in the bowl and toss them in the olive oil mixture, ensuring they are well coated.
  5. Arrange the coated tomato halves in a single layer in the air fryer basket, cut side up.
  6. Set the air fryer to roast at 375°F (190°C) for 12-15 minutes, depending on the size of your tomatoes. Check at around the 10-minute mark to avoid overcooking.
  7. Once the tomatoes are tender and slightly caramelized on the edges, remove them from the air fryer.
  8. Optional: Sprinkle grated Parmesan cheese over the roasted tomatoes while they are still warm.
  9. Garnish with chopped fresh basil and serve as a side dish or use them in various recipes like salads, bruschetta, or pasta.

Notes:

  • Adjust the cooking time based on the size and thickness of your Roma tomatoes. Thicker tomatoes may require slightly more time to cook.
  • You can customize the herbs and seasonings according to your preference. Herbs like rosemary, thyme, or basil work well for additional flavor.
  • The optional addition of Parmesan cheese adds a delicious savory touch. Feel free to skip it if you prefer a dairy-free option.
  • These roasted tomatoes can be used in various dishes like sandwiches, pizzas, and pasta. They can also be blended into sauces or soups for an extra burst of flavor.
  • Make sure to keep an eye on the tomatoes as they cook in the air fryer to prevent burning. Adjust the temperature or cooking time as needed.
  • Always handle the air fryer basket and food with oven mitts or tongs, as they will be hot during and after cooking.
  • Experiment with different toppings such as balsamic glaze, feta cheese, or chopped nuts for added variety and texture.
