Air Fryer Zucchini Bread Recipe:

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups grated zucchini, excess moisture squeezed out
  • 1/2 cup chopped nuts (walnuts or pecans), optional

Instructions:

  1. Preheat your air fryer to 320°F (160°C) for about 5 minutes.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate large bowl, beat together the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well combined and slightly frothy.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  5. Fold in the grated zucchini and chopped nuts (if using) into the batter until evenly distributed.
  6. Lightly grease a loaf pan that fits into your air fryer basket. Pour the zucchini bread batter into the loaf pan and spread it evenly.
  7. Place the loaf pan in the preheated air fryer basket and cook at 320°F (160°C) for about 35-40 minutes. Check for doneness by inserting a toothpick into the center of the bread – it should come out clean or with a few crumbs clinging to it.
  8. Once done, carefully remove the loaf pan from the air fryer and allow the zucchini bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  9. Slice and enjoy your delicious air fryer zucchini bread!

Notes:

  • Different air fryer models may have varying cooking times, so keep an eye on your zucchini bread as it cooks to prevent over-baking.
  • If you prefer a sweeter bread, you can increase the amount of granulated sugar to your liking.
  • Make sure to squeeze out excess moisture from the grated zucchini before adding it to the batter. This will prevent the bread from becoming too soggy.
  • You can customize the recipe by adding chocolate chips, dried fruits, or other mix-ins of your choice.
  • This zucchini bread can be stored in an airtight container at room temperature for a few days, or you can refrigerate or freeze it for longer storage.

Enjoy your homemade air fryer zucchini bread!

Certainly! Here are some additional tips, variations, and notes to consider when making air fryer zucchini bread:

Tips:

  1. Preheating: Preheating the air fryer is essential for even baking. Make sure to preheat it according to the recipe instructions to achieve the best results.
  2. Loaf Pan Size: Ensure that the loaf pan you use fits comfortably inside your air fryer basket. If it’s too large, it might not cook evenly.
  3. Temperature Adjustment: Air fryers can vary in temperature accuracy. It’s a good idea to check the internal temperature of the zucchini bread with an oven thermometer to ensure it’s fully baked. The internal temperature should reach around 200°F (93°C).
  4. Non-Stick Coating: If your loaf pan doesn’t have a non-stick coating, consider lining it with parchment paper to prevent sticking.
  5. Slicing: Allow the zucchini bread to cool completely before slicing for clean and neat slices.

Variations:

  1. Glaze or Icing: Drizzle a simple glaze or icing made with powdered sugar and a touch of milk over the cooled zucchini bread for added sweetness.
  2. Spices: Experiment with different spices like ginger, cloves, or allspice to customize the flavor of your zucchini bread.
  3. Healthy Swaps: You can make the zucchini bread healthier by using whole wheat flour, coconut oil, or a natural sweetener like honey or maple syrup.
  4. Flavor Additions: Add in chocolate chips, raisins, dried cranberries, or shredded coconut for extra texture and flavor.

Troubleshooting:

  1. Soggy Bottom: If you find that the bottom of your zucchini bread is too moist or soggy, try placing the loaf pan on a wire rack after removing it from the air fryer. This can help prevent condensation from forming under the loaf.
  2. Uneven Baking: If you notice uneven baking, you can try rotating the loaf pan halfway through the cooking time to promote even cooking.
  3. Undercooked Center: If the toothpick test indicates an undercooked center, you can tent the top of the loaf with aluminum foil to prevent over-browning while the center continues to cook.

Remember that baking is a creative process, and you can adjust the recipe and techniques to suit your preferences and the specific characteristics of your air fryer. Enjoy the process of experimenting and creating your perfect air fryer zucchini bread!
