Wash and dry the baby potatoes, then cut them in half. Cut off any bruised/dark spots on the potatoes. When done, place cut potatoes into a bowl.

Preheat the air fryer to 385 degrees Fahrenheit.

In the meantime, add oil, salt, garlic powder, Italian seasoning, chopped rosemary (optional), and black pepper to the bowl as well. Toss until the potatoes are evenly coated in oil and spices.

When the air fryer is hot, add the potatoes to the air fryer basket. Gently shake the basket so that the potatoes are in one even layer.

Cook the baby potatoes for 15-18 minutes total until tender and slightly crispy on the outside. Shake the air fryer basket every 5 minutes to help with even cooking. The exact cooking time can vary slightly depending on the size of baby potatoes and your air fryer.

Once cooked, remove the potatoes and serve them as a wonderful side dish!
- You can either use red, yellow, or purple baby potatoes – or even a mix – for this recipe. They all work well.
- Spiced as indicated above, these potatoes will be quite flavorful. Feel free to reduce the amount and number of spices you use if you don’t like that.
