Triple Cooked Chips in Air Fryer

Triple-cooked chips are typically made by boiling the potatoes, frying them twice at different temperatures, and then frying them a final time at a higher temperature to achieve a crispy exterior and a fluffy interior. While an air fryer can’t replicate the exact process of triple-cooking, you can still achieve delicious, crispy chips using an air fryer. Here’s a modified method you can try:

  1. Start by selecting starchy potatoes such as russets or Maris Piper. Peel and cut them into your desired chip shape. Rinse the potato slices in cold water to remove excess starch.
  2. Place the potato slices in a pot and cover them with cold water. Bring the water to a boil and cook the chips for about 5-7 minutes until they are slightly tender but not fully cooked. Drain them and let them cool completely.
  3. Preheat your air fryer to around 375°F (190°C). While the air fryer is preheating, you can optionally toss the cooled chips in a tablespoon of oil and season them with salt and any other desired seasonings.
  4. Once the air fryer is preheated, place a single layer of chips in the fryer basket. Make sure they are not overcrowded to allow for even cooking. Cook the chips for about 15-20 minutes, shaking or flipping them halfway through, until they turn golden brown and crispy.
  5. Remove the first batch of chips from the air fryer and let them cool for a few minutes. Meanwhile, preheat the air fryer again, this time to a higher temperature, around 400-425°F (200-220°C).
  6. Once the air fryer is preheated, return the partially cooked chips to the fryer basket in a single layer. Cook them for an additional 5-10 minutes, or until they reach your desired level of crispiness. Keep an eye on them to prevent burning.
  7. Once the chips are golden brown and crispy, remove them from the air fryer and let them cool for a few minutes before serving.

Remember, the cooking times may vary depending on the thickness of your chips and the specific air fryer model you’re using. It’s best to monitor them closely during the cooking process to achieve your desired level of crispiness.
