Air Fryer Roasted Bacon Potatoes

Ingredients:

  • 4-5 medium-sized russet potatoes, peeled and cut into bite-sized cubes
  • 4-6 slices of bacon, chopped into small pieces
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Chopped fresh parsley (optional, for garnish)

Instructions:

  1. Prepare the Potatoes:
    • Peel the potatoes and cut them into bite-sized cubes. Make sure the pieces are roughly the same size for even cooking.
  2. Preheat the Air Fryer:
    • Preheat your air fryer to 400°F (200°C) for a few minutes.
  3. Toss with Seasonings:
    • In a large bowl, combine the potato cubes, olive oil, garlic powder, paprika, salt, and pepper. Toss everything together until the potatoes are evenly coated with the seasonings.
  4. Layer in the Air Fryer:
    • Place a single layer of the seasoned potato cubes in the air fryer basket. Do not overcrowd the basket; you may need to cook them in batches.
  5. Cook the Potatoes:
    • Cook the potatoes in the air fryer at 400°F (200°C) for about 15-20 minutes, shaking or stirring them halfway through. Cooking time may vary depending on the size of your potato cubes and the specific air fryer model you’re using.
  6. Cook the Bacon:
    • While the potatoes are cooking, in a separate pan, cook the chopped bacon over medium-high heat until it becomes crispy. You can drain excess fat on a paper towel.
  7. Combine Bacon and Potatoes:
    • Once the potatoes are golden brown and crispy on the outside and tender on the inside, remove them from the air fryer and place them in a serving dish. Add the crispy bacon pieces on top of the roasted potatoes.
  8. Garnish and Serve:
    • Optionally, garnish the dish with chopped fresh parsley for a pop of color and flavor.
  9. Repeat if Necessary:
    • If you have more potato cubes to cook, repeat the process until all the potatoes are done.
  10. Serve Hot:
    • Serve your Air Fryer Roasted Bacon Potatoes hot as a side dish for breakfast, brunch, or dinner. They’re a delightful combination of crispy, smoky bacon and perfectly roasted potatoes.
