Sure! Here’s a recipe for Air Fryer Coconut Chicken:

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 cup shredded coconut (unsweetened)
  • 1/2 cup bread crumbs
  • 1/4 cup all-purpose flour
  • 2 eggs, beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Cooking spray

Instructions:

  1. Preheat your air fryer to 400°F (200°C).
  2. In a shallow dish, combine the shredded coconut, bread crumbs, salt, black pepper, garlic powder, and paprika. Mix well.
  3. Place the all-purpose flour in a separate shallow dish.
  4. Cut the chicken breasts into strips or nugget-sized pieces.
  5. Dip each piece of chicken into the flour, shaking off any excess.
  6. Dip the flour-coated chicken into the beaten eggs, allowing any excess to drip off.
  7. Roll the chicken in the coconut breadcrumb mixture, pressing gently to adhere the coating.
  8. Place the coated chicken in a single layer in the air fryer basket, ensuring they are not touching each other. You may need to cook in batches depending on the size of your air fryer.
  9. Lightly spray the chicken with cooking spray to help achieve a crispy exterior.
  10. Cook the chicken in the air fryer for 12-15 minutes, flipping them halfway through, until they are golden brown and cooked through. The cooking time may vary slightly depending on the thickness of the chicken.
  11. Once cooked, remove the chicken from the air fryer and let it cool for a few minutes before serving.
  12. Serve the air fryer coconut chicken with your favorite dipping sauce or alongside a salad or rice for a complete meal.
