Ingredients:

  • 3 cups mashed potatoes, chilled
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped chives or green onions
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (panko or regular)
  • Cooking spray

Optional Dipping Sauce:

  • Sour cream or ranch dressing

Instructions:

Preparing the Mashed Potato Mixture:

  1. Chill Mashed Potatoes: Ensure that your mashed potatoes are well-chilled. This makes it easier to shape them into balls.
  2. Add Cheese and Chives: In a large bowl, combine the chilled mashed potatoes with shredded cheddar cheese and chopped chives. Mix well until the ingredients are evenly distributed.

Shaping the Potato Balls:

  1. Prep Stations: Set up a breading station with three shallow bowls. Place flour in one bowl, beaten eggs in another, and breadcrumbs in the third.
  1. Shape Potato Balls: Scoop about 2 tablespoons of the mashed potato mixture and shape it into a ball. Roll each ball in the flour, then dip it into the beaten eggs, and finally coat it in breadcrumbs. Place the coated ball on a plate or tray. Repeat until all the mixture is used.
  2. Chill Again (Optional): For an extra firm texture, you can chill the shaped potato balls in the refrigerator for 15-20 minutes before air frying.

Air Frying:

  1. Preheat Air Fryer: Preheat your air fryer to 375°F (190°C).
  2. Spray with Cooking Oil: Lightly spray the potato balls with cooking spray. This helps achieve a crispy exterior.
  3. Air Fry: Place the potato balls in the air fryer basket in a single layer, making sure they are not overcrowded. Cook for 12-15 minutes or until they are golden brown and crispy, shaking the basket halfway through for even cooking.
  4. Check for Doneness: Check one potato ball to ensure it’s cooked through and has a crispy texture.

    1. Serve Hot: Remove the air-fried mashed potato balls from the air fryer and let them cool slightly before serving.
