Ingredients
- 1 Large Russet Potato, cut into approx ¼ inch thick slices
- 1 Tablespoon olive oil
- Salt and pepper to taste
- ½ cup cheddar cheese, shredded
- 2 Tablespoons green onions for topping. Chopped.. Can sub with chives.
- ¼ cup sour cream. For topping.
Instructions
- Scrub and rinse the potato. Leave the skin on (optional)
- Thinly slice the potato to approx. ¼ inch thick.
- Rinse the potato slices under running water. This helps to rid of the starch.
- Place the potato slices in a large bowl. Sprinkle with olive oil, salt, and pepper to season
- Preheat the air fryer to 380F/190CArrange the potato slices in a single layer.
- Air fry mode at 380F/190C for 5 minutes, until lightly browned on top.
- Flip each potato slice on the other side and cook for 2 minutes
- Sprinkle the cheese evenly among the potato slices and cook for 2-3 minutes, until the cheese is melted and caramelized.
- Top each potato slice with green onions or chives, and a dollop of sour cream.
