Super Quick Stir Fry Broccoli and Carrot with Chicken Recipe

Ingredients:

  • For the Chicken:
    • 1 pound chicken breast, thinly sliced
    • 1 tablespoon soy sauce
    • 1 tablespoon cornstarch
    • 1/2 teaspoon black pepper
  • For the Stir Fry:
    • 2 tablespoons vegetable oil
    • 1 medium head of broccoli, cut into florets
    • 2 large carrots, sliced diagonally
    • 2 cloves garlic, minced
    • 1 tablespoon fresh ginger, minced
  • For the Sauce:
    • 3 tablespoons soy sauce
    • 2 tablespoons oyster sauce
    • 1 tablespoon hoisin sauce (optional for added sweetness and depth)
    • 1 teaspoon sesame oil
    • 1/2 cup chicken broth or water
    • 1 teaspoon sugar
  • To Serve:
    • Sesame seeds (optional)
    • Green onions, chopped (optional)
    • Cooked rice or noodles

Equipment:

  • Large skillet or wok
  • Mixing bowls
  • Measuring spoons and cups

Instructions:

  1. Marinate the Chicken:
    • In a bowl, mix the thinly sliced chicken breast with 1 tablespoon soy sauce, cornstarch, and black pepper. Let it marinate for at least 10 minutes while you prep the other ingredients.
  2. Prepare the Sauce:
    • In a small bowl, whisk together 3 tablespoons soy sauce, oyster sauce, hoisin sauce if using, sesame oil, chicken broth, and sugar. Set aside.
  3. Cook the Chicken:
    • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
    • Add the marinated chicken and stir-fry until it is nearly cooked through and lightly browned, about 3-4 minutes.
    • Remove the chicken from the skillet and set aside.
  4. Stir-Fry Vegetables:
    • In the same skillet, add another tablespoon of oil.
    • Add the minced garlic and ginger, stir-frying for about 30 seconds until fragrant.
    • Add the broccoli florets and carrot slices. Stir-fry for about 4-5 minutes until the vegetables are tender-crisp.
  5. Combine Ingredients:
    • Return the chicken to the skillet.
    • Pour the sauce mixture over the chicken and vegetables.
    • Stir everything together and cook for an additional 2-3 minutes, allowing the sauce to thicken slightly and coat the ingredients evenly.
  6. Final Touches and Serve:
    • Sprinkle with sesame seeds and chopped green onions if desired.
    • Serve the stir-fry hot over cooked rice or noodles.
