Ingredients
For the Base:
- 1 cup (100g) crushed digestive biscuits or graham crackers
- 1/4 cup (60g) melted butter
For the Filling:
- 2 cups (450g) cream cheese, softened
- 1/2 cup (100g) sugar
- 2 eggs
- 1/4 cup (60ml) Baileys Irish Cream
- 1 tsp vanilla extract
- 1 tbsp all-purpose flour
Instructions
Step 1: Make the Base
- Combine crushed biscuits and melted butter in a bowl.
- Press the mixture into the bottom of a greased and parchment-lined 6-inch springform pan.
- Chill in the freezer while you make the filling.
Step 2: Prepare the Filling
- In a large bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, beating well after each.
- Mix in Baileys, vanilla, and flour until fully combined.
Step 3: Air Fry
- Pour the filling over the chilled crust.
- Preheat air fryer to 160°C (320°F).
- Place the cheesecake in the air fryer basket and air fry for 25–30 minutes, or until the center is just set.
- Cool to room temperature, then refrigerate for at least 4 hours or overnight.
