Ingredients:
- 8 small flour tortillas
- 8 oz (225g) cream cheese, softened
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup blueberries (fresh or frozen)
- 1 tsp lemon zest
- 1 tsp lemon juice
- 1/4 cup powdered sugar
- Cooking spray

Instructions:
- In a mixing bowl, combine the softened cream cheese, granulated sugar, and vanilla extract. Mix until smooth and well combined.
- In a separate bowl, gently toss the blueberries, lemon zest, and lemon juice together.
- Lay out a tortilla on a clean surface. Spoon a generous dollop of the cream cheese mixture onto the center of the tortilla, then top with a spoonful of the blueberry mixture.
- Fold in the sides of the tortilla and then roll it up tightly, similar to a burrito. Secure the ends with toothpicks to prevent the chimichangas from unraveling.
- Preheat your air fryer to 350°F (175°C).
- Lightly coat the chimichangas with cooking spray to help them crisp up.
- Place the chimichangas in the preheated air fryer basket in a single layer, making sure they are not touching. You might need to cook them in batches depending on the size of your air fryer.
