Air Fryer Chicken and Potatoes is a super easy weeknight dinner idea. This simple air fryer recipe consists of bone-in chicken thighs, mini gold potatoes and colorful bell peppers.
You can absolutely cook entire meals in your air fryer. It’s just a matter of knowing what cooks at the same temp and time. Or knowing when to add the ingredients that take less time.
This air fryer dinner starts with chicken thighs and potatoes then we add the peppers about half way through. A full dinner ready to serve.
Ingredients
2 Lbs Bone-In, Skin-On Chicken Thighs
1 Lb Mini Gold Potatoes – halved
1 Red Bell Pepper – seeded and chopped
1 Orange Bell Pepper – seeded and chopped
1 teaspoon Garlic Powder
1/2 teaspoon Smoked Paprika
1/2 teaspoon Onion Powder
1/4 teaspoon Cumin
Generous Pinch Salt/Pepper
Instructions
Mix garlic powder, paprika, onion powder, cumin, salt and pepper.
Coat chicken thighs in oil then sprinkle 2/3 of spice mixture over the thighs. Transfer to greased air fryer basket, placing off to one side.
Toss potatoes with oil and remaining spices. Transfer to air fryer basket next to the chicken thighs.
Air fry at 400ºF 10 minutes.
Add peppers to the potatoes, toss and sprinkle with salt.
Air fry at 400ºF for 10-15 more minutes or until chicken thighs are cooked through (165ºF internal temp).
Notes
Feel free to use 2 teaspoons of your favorite spice blend instead of the spices in this recipe.
