Air Fryer Chicken Fajitas

Air Fryer Chicken Fajitas are a quick and easy way to enjoy a delicious Tex-Mex meal with minimal effort and cleanup. Here’s a recipe and some notes to help you make them:

Ingredients:

For the Chicken Marinade:

  • 1 pound boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon oregano
  • Salt and pepper to taste
  • Juice of 1 lime

For the Fajita Vegetables:

  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

For Assembling and Serving:

  • 6 small flour tortillas or corn tortillas
  • Sour cream, guacamole, salsa, shredded cheese, and chopped cilantro for toppings (optional)

Instructions:

  1. Marinate the Chicken:
    • In a bowl, combine the olive oil, minced garlic, chili powder, cumin, paprika, oregano, salt, pepper, and lime juice.
    • Add the sliced chicken to the marinade and toss to coat. Let it marinate for at least 15 minutes, or you can refrigerate it for a few hours for more flavor.
  2. Prepare the Fajita Vegetables:
    • In a separate bowl, toss the sliced bell peppers and onions with olive oil, salt, and pepper.
  3. Preheat the Air Fryer:
    • Preheat your air fryer to 375°F (190°C) for a few minutes.
  4. Cook the Chicken and Vegetables:
    • Place the marinated chicken in the air fryer basket in a single layer. Cook for about 8-10 minutes, shaking the basket halfway through to ensure even cooking. The chicken should be cooked through and slightly browned.
    • At the same time, place the seasoned bell peppers and onions in the air fryer basket, ensuring they are in a single layer. Cook for about 8-10 minutes or until they are tender and slightly charred.
  5. Warm the Tortillas:
    • While the chicken and vegetables are cooking, you can warm the tortillas in a microwave, on a skillet, or in the air fryer for a minute or two until they are soft and pliable.
  6. Assemble the Fajitas:
    • To serve, place some cooked chicken and fajita vegetables on a tortilla.
    • Add your favorite toppings like sour cream, guacamole, salsa, shredded cheese, and chopped cilantro.
  7. Enjoy: Roll up the tortilla, and your air fryer chicken fajitas are ready to enjoy!

Notes:

  • You can customize the fajitas by adding other toppings like diced tomatoes, shredded lettuce, or jalapeño slices.
  • If you want spicier fajitas, add some red pepper flakes or hot sauce to the chicken marinade.
  • Be cautious not to overcrowd the air fryer basket; cook the chicken and vegetables in batches if needed to ensure even cooking.
  • Adjust the cooking time based on your air fryer model and the thickness of the chicken slices. Make sure the chicken reaches an internal temperature of 165°F (74°C).
  • Corn tortillas are a great gluten-free option for fajitas.
  • Leftover fajita filling can be refrigerated and used for salads, burritos, or quesadillas the next day.
