AIR FRYER EGGPLANT WITH GARLIC PARMESAN BUTTER

Air fryer eggplant with garlic Parmesan butter is a delicious and easy recipe that combines the crispy texture of eggplant with the rich flavors of garlic and Parmesan. Here’s a simple recipe for you to try:

Ingredients:

  • 1 large eggplant
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 3 cloves garlic, minced
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Preheat your air fryer to 400°F (200°C).
  2. Wash the eggplant and cut it into 1/2-inch thick slices. You can leave the skin on or peel it, depending on your preference.
  3. Brush both sides of the eggplant slices with olive oil and season with salt and pepper.
  4. Place the eggplant slices in a single layer in the air fryer basket. You may need to cook them in batches depending on the size of your air fryer.
  5. Cook the eggplant slices in the air fryer for about 8-10 minutes, flipping them halfway through, until they are golden brown and crispy. Adjust the cooking time based on the thickness of the slices and your desired level of crispness.
  6. While the eggplant is cooking, prepare the garlic Parmesan butter. In a small bowl, combine the minced garlic, melted butter, and grated Parmesan cheese.
  7. Once the eggplant slices are done, remove them from the air fryer and transfer them to a serving platter.
  8. Drizzle the garlic Parmesan butter over the cooked eggplant slices.
  9. If desired, garnish with fresh chopped parsley for added freshness and color.
  10. Serve the air fryer eggplant with garlic Parmesan butter as a side dish or appetizer. It pairs well with a variety of main courses or can be enjoyed on its own.
