Air Fryer Fried Rice with Chicken and Veggies
Ingredients:
For the Fried Rice:
2 cups cooked and cooled rice (preferably day-old rice)
1 cup diced cooked chicken breast
1 cup mixed vegetables (peas, carrots, bell peppers, etc.), diced
2 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon cooking oil (for the air fryer)
Salt and pepper to taste
Optional: sliced green onions, sesame seeds, or fried shallots for garnish
Instructions:
Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C). This will ensure that the fried rice cooks evenly and gets crispy.
Prepare Ingredients: Dice the chicken and vegetables into small, uniform pieces. Mince the garlic. If you’re using leftover rice, break up any clumps to ensure it cooks evenly.
Heat Oil: Place the cooking oil in the air fryer basket and spread it around to coat the bottom evenly.
Saute Garlic: Add the minced garlic to the air fryer basket and cook for about 1 minute to release its aroma. Keep an eye on it to prevent burning.
Cook Chicken: Add the diced chicken to the air fryer and cook for about 3-4 minutes or until it starts to brown and cook through.
Add Vegetables: Add the diced vegetables to the air fryer basket with the chicken and cook for another 2-3 minutes or until they start to soften.
Add Rice: Add the cooked and cooled rice to the air fryer basket with the other ingredients. Mix everything together to combine evenly.
Season: Drizzle the soy sauce over the rice and toss to coat. Season with salt and pepper to taste. You can also add other seasonings or sauces if desired.
Air Fry: Close the air fryer basket and cook the fried rice for about 6-8 minutes, tossing or shaking the basket occasionally to ensure even cooking. Cook until the rice is crispy and heated through.
Serve: Once the fried rice is crispy and hot, remove it from the air fryer. Garnish with sliced green onions, sesame seeds, or fried shallots if you like.
