Take your notion of a traditional Scotch egg and beef it up. Then prepare it in an air fryer for a crispy crust in no time.
Ingredients:
1 pound Certified Angus Beef ® ground beef, 90% lean
5 eggs
1 teaspoon dried sage
1 teaspoon salt
1/2 teaspoon red chili flake
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon black pepper
1/2 cup flour
2 tablespoons milk
1 cup panko style bread crumbs
1 bottle spray oil
Instructions:
In medium saucepan bring 2 quarts of water to a boil; add 4 eggs, boil 8 minutes (Reserve remaining single egg for later.) Fill a large bowl half full with ice water. With a slotted spoon remove eggs from boiling water and submerge into ice water.
In a mixing bowl combine ground beef with sage, salt, chili flake, garlic powder, onion powder and black pepper. Hand mix to evenly blend spices into beef.
Gently peel the cooked eggs, making sure to keep the white intact. Divide the seasoned ground beef into four portions and form into large disks about 1/4 inch thick. Cup each patty in one hand and gently place the egg in the middle of each cup. Carefully work the meat around each egg to fully encompass the egg with beef.
Arrange three bowls; 1) with flour, 2) remaining raw egg beaten with milk, and 3) panko. Dredge each egg in flour, dip in egg mixture then roll in panko. Place each Scotch egg on a wire rack affixed on a sheet pan and refrigerate for 20 minutes.
Set air fryer to 400°F. Spray each Scotch egg evenly with spray oil and place in air fryer, allowing space between each. Air fry for 7 minutes, rotate each egg and fry an additional 7 minutes.
