Ingredients
- 2 boneless, skinless chicken breasts
- 1/2 cup bread crumbs
- 1 egg
- 1/2 cup feta cheese
- 1 cup spinach, cooked and drained
- 1 teaspoon salt
- 1/2 teaspoon black pepper

- Start by butterflying the chicken. This means get a sharp knife and cut the chicken breast in half, leaving about 1/2 inch left on the side so that you can close it up.
- Season your chicken, both sides with salt and pepper.
- Add the Feta Cheese and Spinach to the middle of the chicken breast, and then fold up.
- In a small bowl, mix the egg and 2 tablespoons of water.
- Brush the egg wash over the chicken and then coat with the bread crumbs.
- Spray your air fryer basket with cooking spray.
- Use toothpicks to attach the two sides or place the seam down into the air fryer basket.
- Add some more seasoning on top.
- Spray the chicken breast’s tops with olive oil spray and set them into the air fryer basket. Set the temperature to 350 degrees F, air fryer setting for 15-20 minutes. The actual time will depend on how thick your chicken breast is.
- Check the internal temperature to ensure the chicken reaches an internal temperature of 165 degrees before removing it.
