Air Fryer Teriyaki Chicken Breasts

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon mirin (Japanese sweet rice wine)
  • 1 teaspoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Sesame seeds and chopped green onions for garnish (optional)

Instructions:

  1. In a bowl, whisk together soy sauce, honey, rice vinegar, mirin, sesame oil, ginger, and garlic to make the teriyaki sauce.
  2. Place the chicken breasts in a ziplock bag or a shallow dish and pour half of the teriyaki sauce over them. Reserve the remaining sauce for later. Let the chicken marinate for at least 30 minutes to absorb the flavors.
  3. Preheat your air fryer to 400°F (200°C) for a few minutes.
  4. Remove the chicken breasts from the marinade and discard the marinade. Pat the chicken dry with paper towels to remove excess moisture.
  5. Lightly coat the air fryer basket with cooking spray or brush with oil to prevent sticking.
  6. Place the chicken breasts in the air fryer basket in a single layer, leaving space between them for proper air circulation. Cook for 10 minutes.
  7. Meanwhile, in a small bowl, mix cornstarch and water to create a slurry. Set it aside.
  8. After 10 minutes, flip the chicken breasts and cook for another 5 to 8 minutes, or until they reach an internal temperature of 165°F (74°C) and the outside is crispy and golden brown.
  9. Brush the reserved teriyaki sauce onto the chicken breasts during the last few minutes of cooking, allowing it to caramelize.
  10. Remove the chicken from the air fryer and let it rest for a few minutes. Slice the chicken breasts into thin strips.
  11. If desired, sprinkle sesame seeds and chopped green onions over the chicken as a garnish.
  12. Serve the Air Fryer Teriyaki Chicken Breasts with steamed rice or stir-fried vegetables. You can also drizzle some extra teriyaki sauce over the chicken for added flavor.

Notes:

  • If you don’t have mirin, you can substitute it with additional honey or a little bit of sugar.
  • Adjust the marinating time according to your preference. The longer the chicken marinates, the more flavor it will absorb.
  • Cooking times may vary depending on the size and thickness of the chicken breasts. It’s essential to use a meat thermometer to ensure the chicken is cooked through.
  • Feel free to customize the recipe by adding your favorite vegetables to the air fryer basket alongside the chicken for a complete meal.
