ingredients:
- 1 cup of panko bread crumbs
- ¾ cup of grated Parmesan cheese
- 1 medium zucchini, thinly sliced
- 1 large egg, beaten
- Cooking spray
Directions:
- Collect all the necessary ingredients.
- Preheat the air fryer to 350°F (175°C).
- On a plate, mix the panko bread crumbs and grated Parmesan cheese.
- Dip a zucchini slice into the beaten egg, then into the panko mixture, pressing to coat. Place the coated zucchini slice on a wire baking rack and repeat with the remaining slices.
- Lightly spray the zucchini slices with cooking spray.
- If necessary, work in batches and arrange the zucchini slices in a single layer in the air fryer basket.
- Cook the zucchini slices in the preheated air fryer for 10 minutes. Then, flip the slices and cook for an additional 2 minutes.
