Cheesy Hasselback Potatoes

Cheesy Hasselback Potatoes are a delicious and visually appealing twist on traditional baked potatoes. They are named after the Hasselbacken restaurant in Stockholm, Sweden, where they were first created.

To make Cheesy Hasselback Potatoes, follow these steps:

Ingredients:

  • 4 large russet potatoes
  • 1/4 cup melted butter
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite melting cheese)
  • Chopped fresh parsley (optional, for garnish)

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. Scrub the potatoes thoroughly to remove any dirt. Leave the skin on for added texture and flavor. Pat them dry with a paper towel.
  3. Place a potato on a cutting board. Make thin, parallel cuts across the entire length of the potato, but be careful not to cut all the way through. A helpful tip is to place chopsticks or wooden spoons on either side of the potato to act as a guide, preventing the knife from slicing all the way through.
  4. Repeat the process for the remaining potatoes.
  5. In a small bowl, combine the melted butter and minced garlic. Stir well.
  6. Place the potatoes on a baking sheet lined with parchment paper or aluminum foil.
  7. Brush the potatoes generously with the garlic butter mixture, making sure to get in between the slices. Reserve a little bit of the mixture for later.
  8. Season the potatoes with salt and pepper, making sure to sprinkle some in between the slices.
  9. Bake the potatoes in the preheated oven for about 45 minutes to an hour, or until they are golden brown and crispy on the outside, and tender on the inside. Cooking time may vary depending on the size of the potatoes.
  10. Remove the potatoes from the oven and sprinkle the shredded cheese over each potato, again getting it in between the slices. Drizzle the remaining garlic butter mixture over the top.
  11. Return the potatoes to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  12. Once cooked, remove the potatoes from the oven and let them cool slightly. Garnish with chopped fresh parsley, if desired.
  13. Serve the Cheesy Hasselback Potatoes as a side dish or as a delicious main course. Enjoy!
