Ingredients:
3 cups chilled mashed potatoes
1 large egg
1 cup shredded cheddar cheese
1/4 cup chopped chives
1/4 cup all-purpose flour
1/2 teaspoon garlic powder
Salt and pepper to taste
1/2 cup grated Parmesan cheese, for rolling
Cooking spray or oil for greasing
Directions:
- Preheat your air fryer to 400°F (200°C) for about 3-5 minutes.Grease the air fryer basket with cooking spray or a light coating of oil.
- In a large bowl, combine the chilled mashed potatoes, egg, shredded cheddar cheese, chives, flour, garlic powder, salt, and pepper. Mix until well combined.
- Roll the mixture into 1-inch balls, then coat each ball in grated Parmesan cheese.
- Place the coated potato balls into the greased air fryer basket, leaving some space between each puff to allow for even cooking.
- Cook in the air fryer for 10-15 minutes, or until the puffs are golden brown and crisp on the outside. You may need to shake the basket halfway through cooking to ensure even browning.
- Once cooked, carefully remove the potato puffs from the air fryer and allow them to cool for a few minutes before serving.
