Chicken salad in the air fryer

Creating a Chinese Chicken Salad in an air fryer is a delicious and healthy way to enjoy this popular dish. Here’s a simple recipe to get you started:

Ingredients:

For the chicken:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon soy sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon minced garlic
  • Salt and pepper to taste

For the salad:

  • 4 cups shredded Napa cabbage
  • 1 cup shredded carrot
  • 1 cup thinly sliced cucumber
  • 1/4 cup thinly sliced red onion
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped roasted peanuts
  • Sesame seeds for garnish (optional)

For the dressing:

  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon minced garlic

Instructions:

  1. Marinate the chicken: In a bowl, combine the soy sauce, hoisin sauce, sesame oil, grated ginger, minced garlic, salt, and pepper. Add the chicken breasts to the marinade and coat them well. Let it marinate in the refrigerator for at least 30 minutes.
  2. Preheat the air fryer: Preheat your air fryer to 400°F (200°C) for a few minutes.
  3. Air fry the chicken: Place the marinated chicken breasts in the air fryer basket, making sure they don’t overlap. Cook the chicken in the air fryer for about 12-15 minutes, flipping halfway through, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through.
  4. Let the chicken rest: Once the chicken is cooked, remove it from the air fryer and let it rest for a few minutes before slicing it into thin strips.
  5. Prepare the dressing: In a small bowl, whisk together the soy sauce, rice vinegar, honey (or maple syrup), sesame oil, grated ginger, and minced garlic until well combined.
  6. Assemble the salad: In a large mixing bowl, combine the shredded Napa cabbage, shredded carrot, sliced cucumber, and red onion. Add the sliced chicken on top.
  7. Toss the salad: Pour the dressing over the salad and toss everything together until the salad is well coated with the dressing.
  8. Garnish and serve: Sprinkle chopped cilantro, roasted peanuts, and sesame seeds on top for added flavor and presentation. Serve immediately and enjoy your delicious Chinese Chicken Salad!
