Crispy Air Fryer Cheesecake Chimichangas

Crispy Air Fryer Cheesecake Chimichangas

Ingredients:

  • 8 small flour tortillas
  • 1 cup cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup fruit preserves (e.g., strawberry, raspberry)
  • Oil or cooking spray
  • Cinnamon sugar mixture (optional)
  • Powdered sugar (optional)
  • Fresh berries for garnish (optional)
  • Ice cream or whipped cream (optional)

Instructions:

  1. In a mixing bowl, combine the softened cream cheese, granulated sugar, and vanilla extract. Mix until smooth and well combined.
  2. Lay out a tortilla and spoon a couple of tablespoons of the cream cheese mixture onto the center of the tortilla.
  3. Add a spoonful of fruit preserves on top of the cream cheese mixture.
  4. Fold in the sides of the tortilla and then roll it up, similar to a burrito, making sure the filling is securely enclosed.
  5. Preheat your air fryer to 350°F (175°C).
  6. Lightly brush or spray the chimichangas with oil to help them crisp up in the air fryer.
  7. Place the chimichangas in the air fryer basket, making sure they are not touching each other. You may need to cook them in batches if they don’t all fit at once.
  8. Air fry the chimichangas for about 6-8 minutes, turning them over halfway through, or until they are golden brown and crispy.
  9. If desired, remove the chimichangas from the air fryer and immediately roll them in a cinnamon sugar mixture for added flavor and crunch.
  10. Sprinkle powdered sugar over the chimichangas before serving.
  11. Serve the crispy cheesecake chimichangas warm, garnished with fresh berries and a dollop of whipped cream or a scoop of ice cream if desired.

Notes:

  • Experiment with different flavors of fruit preserves to customize the chimichangas to your taste.
  • You can use low-fat cream cheese or Greek yogurt as a healthier alternative.
  • If you don’t have an air fryer, you can also bake the chimichangas in a preheated oven at 375°F (190°C) for about 15-20 minutes or until they are crispy and golden.
  • Be sure to monitor the cooking time closely, as the air fryer’s temperature and cooking times may vary.
  • These chimichangas are best enjoyed fresh, but any leftovers can be stored in an airtight container in the refrigerator and reheated in the air fryer or oven.
  • Get creative with toppings and serve with chocolate drizzle, caramel sauce, or chopped nuts for extra indulgence.
