Here’s a recipe for crispy air fryer potato skins:
Ingredients:
- 4 large russet potatoes
- Olive oil
- Salt and pepper, to taste
- Shredded cheese (cheddar or any other melting cheese)
- Bacon bits
- Sour cream (optional)
- Chopped green onions (optional)
Instructions:
- Preheat your air fryer to 400°F (200°C).
- Wash the potatoes thoroughly and pat them dry. Prick each potato several times with a fork to allow steam to escape during cooking.
- Rub olive oil all over the potatoes, then season them with salt and pepper. This will help make the skins crispy and flavorful.
- Place the potatoes in the preheated air fryer basket, ensuring they are not touching each other. Cook for about 35-40 minutes, or until the potatoes are tender when pierced with a fork.
- Once the potatoes are cooked, remove them from the air fryer and let them cool for a few minutes until they are safe to handle.
- Cut each potato in half lengthwise. Using a spoon, carefully scoop out the flesh of the potato, leaving about ¼ inch of flesh attached to the skin. Save the scooped-out potato flesh for another use (like mashed potatoes).
- Brush the inside and outside of each potato skin with olive oil, then place them back into the air fryer basket.
- Air fry the potato skins for about 5-7 minutes until they become crispy and golden brown.
- Remove the potato skins from the air fryer and sprinkle shredded cheese and bacon bits evenly over each skin.
- Return the potato skins to the air fryer and cook for an additional 2-3 minutes, or until the cheese has melted and bubbly.
- Carefully remove the potato skins from the air fryer, and let them cool slightly. Serve them hot with a dollop of sour cream on top and garnish with chopped green onions, if desired.
Enjoy your crispy air fryer potato skins! They make a great appetizer or party snack.
