Irresistible Potato Rolls with Bacon – A Flavorful Twist on Bite-Sized Delights

Natalie January 28, 2024

Introduction:
Elevate your appetizer game with our Potato Rolls with Bacon – a mouthwatering fusion of crispy bacon-wrapped potato bites, infused with the warmth of rosemary and a zesty sour cream dip. Perfect for entertaining or a savory snack, these delectable bites are sure to be a hit at any gathering.

Ingredients:

1 pound small or medium red potatoes
2 1/2 teaspoons kosher salt, divided
1 1/2 teaspoons minced fresh rosemary
1 tablespoon olive oil
Freshly ground pepper
1 pound thick-cut bacon
8 ounces sour cream
1 to 3 teaspoons hot sauce
Salt and pepper to taste
Instructions:

Wash and dry the potatoes, chopping them into 1-inch pieces of roughly the same size. Place them in a medium pot, cover with cold water, and bring to a boil.
Season the water with 2 teaspoons of salt. Cook the potatoes until just fork-tender (3 to 4 minutes). They should be almost, but not fully, cooked through to prevent them from falling apart during the next steps.
Coat with Flavors:

Drain the potatoes and transfer them to a large bowl. Add rosemary, olive oil, remaining salt, and a few grinds of pepper. Toss until the potatoes are evenly coated.
Wrap with Bacon:

Cut the bacon strips into thirds. Wrap each potato bite in a piece of bacon, securing it with a toothpick. Place the bacon-wrapped potatoes on a baking sheet lined with parchment paper or aluminum foil, spaced an inch or two apart. Depending on the quantity, you may need to cook in two batches.
Bake to Perfection:

Preheat the oven to 400°F. Bake the potatoes for 15 minutes, then flip each piece. Continue baking for an additional 15 to 20 minutes, or until the bacon is cooked through and reaches your desired level of crispiness.
Prepare the Sour Cream Dip:

In a small bowl, mix sour cream and hot sauce. Season with salt and pepper according to your taste preferences.
Serve and Enjoy:

Pile the bacon-wrapped potato rolls on a plate and serve alongside the flavorful sour cream dip.

Additional Tips:

Variations:
Experiment with different potato varieties or try a flavored bacon for a unique twist.

Make-Ahead Option:
Prepare the bacon-wrapped potatoes in advance and store in the refrigerator until ready to bake, making it a convenient option for entertaining.

Dip Customization:
Adjust the hot sauce quantity in the sour cream dip to suit your spice preference.

Conclusion:
Indulge in the rich and savory experience of Potato Rolls with Bacon, where the smokiness of bacon meets the earthiness of rosemary, all complemented by a tangy sour cream dip. These delectable bites bring a burst of flavor to any occasion, making them an irresistible addition to your culinary repertoire. Perfectly crispy and satisfyingly flavorful, these bacon-wrapped potato rolls are a guaranteed crowd-pleaser.
